Sweet potato & roasted peppers crustless quiche

I am trying to eat healthy these days and come across this recipe. The recipe is really quick and easy and healthy too.

Ingredients

  • 1 medium sweet potato, diced
  • 1 brown onion, sliced
  • 1 red pepper (bell pepper/capsicum), sliced
  • 1 tbsp fresh thyme leaves
  • 3 garlic cloves, finely diced
  • 1 tbsp balsamic vinegar
  • Pinch of sea salt
  • 6 eggs
  • 1/4 cup full fat cream
  • Zest of 1/2 lemon
  • Sea salt and pepper for seasoning
  • 1-2 tbsp of pine nuts
  • Ghee, macadamia oil or virgin olive oil for cooking

Steps

  • Preheat oven to 200°C (390°F). Grease a flat baking tray with coconut oil and scatter diced sweet potato. Bake for 20 minutes. Remove and turn the oven down to 180°C (355°F), ready for the quiche to go in.

  • In a medium frying pan, sauté onion and red peppers in ghee or macadamia oil on medium heat for 15 minutes. After 10 minutes of cooking, add fresh thyme, garlic, balsamic vinegar and a pinch of salt.

  • Whisk eggs with cream and combine with the zest of lemon, a pinch of black pepper and a generous pinch of sea salt.
  • Grease the bottom of a deep baking tray with coconut oil and line with baking paper, making sure the sides are covered. Assemble sweet potatoes and onion and red peppers mix evenly on the bottom. Pour whisked egg mix on top.

  • Bake for 10 minutes, then sprinkle with pine nuts and some extra fresh thyme and bake for a further 10 minutes.

  • Stand aside to cool and settle for 5 minutes before serving.

Hello Summer!

I know most of you on the northern hemisphere are counting the last few days of autumn and it will be a cold winter but for us here down under, it is a different story, its summer time.

As you may know reading my posts here that I hate winter so this is a great time of the year for me. I am loving the beautiful spring weather which is slowing turning into summer. To enjoy this beautiful weather we have been going to parks often.

There is a park near our place which has rows of Jacaranda trees and the purple colour looks just amazing this time of the year. Chhori loves running around and it is a great place for me to spend some time with my parents.

Also on the weekend, we took Chhori to a beach with our friends and family. She had an absolutely amazing time. We took a beach bucket and spade set so we could dig in the sand. We made sand castles and dug holes.

We had Chhori and my nephews covered with sand at one point and they loved it.

Overall it was an absolutely great day and I can’t wait to spend more days like this by the beach.

Summer always makes me happy, coming home from work when the sun is still up in the sky, enjoying the beach, BBQ and lots of outdoor times. As Chhori is getting older, we are going out and about more and life is getting back to normal.

If you are on my side of the world, enjoy the great weather and if you are on the other side, stay warm.

On a side note, I am not sure for you all but for me this year has gone by so quickly. I feel as if it was only a few weeks ago that I wrote a post about coming back to work after maternity leave and now it is almost the end of the year.

I am sure most of you have read Our Story in this blog where I wrote about my love story with AS. I have always said that I feel so blessed to have such a wonderful man in my life.

The day that he entered my world changed me in such a positive way. Life is beautiful now. I see the importance in every action that I take. Each moment is cherished.

We have been through the good and the bad times in life together and I have to admit he has been a pillar of strength in my life.

He knows me so well and makes sure I am happy. He makes me smile and laugh and I love those moments.

This morning I woke up as normal. AS and Chhori were still be in bed and I started getting ready to go to work. When I went to the kitchen to make breakfast, this was on our kitchen bench top, it just melted my heart.

Sculpture by the Sea 2016

Sculpture by the Sea is staged along the Bondi to Tamarama coastal walk. The coastal walk begins at the bottom of Notts Avenue, which runs off Campbell Parade, Bondi. The coastal walk can also be accessed by stairs at various points along the exhibition route at Hunter Park, Gaerloch Avenue and Pacific Avenue. The exhibition finishes at Tamarama Park, Marine Drive, Tamarama.

It is Chhori’s second time there but its first time she could run around and she loved it.
