Never drink and drive!!!

A while ago, my brother shared this cute picture of my nephew and I just loved it so sharing with you all.

We were driving and listening to the radio when there came an ad. You know how they have cheesy tagline for ads. So one of the car company had a tagline, “Happy car, happy life”.

AS: “Who is the stupid person who wrote that ad?

Me: “Why?”

AS: “It is the universal truth that happy wife is happy life. Car has nothing to do with a happy life.”

I have to say I have one wise hubby :), don’t you agree?

Our new garden

Remember, a while ago we moved into a new apartment. We had a choice of getting a house or an apartment at that stage.

A house meant we could have backyard and frontyard but we would need to travel longer for work. We chose to stay closer to the city and our work hence we ended up buying an apartment.

So far, we are loving our new place and happy about our choice. Now we have one more reason to love our place, we have our own garden.

Before we even moved into this place, AS had this crazy idea to have a synthetic grass on the balcony and convert it into a garden. I was not thrilled about the idea in the beginning as synthetic grass is really expensive and I wasn’t not sure how it would turn out.

However, when we moved to our new place, we have a big balcony. Actually the balcony is bigger than two of the bedrooms we have.So finally, we decided that it would be a good idea and had laid the fake grass and we are quite pleased with the end result.

We bought outdoor furniture and a few plants and pots and finally the garden is done. Of course how can an Aussie garden be complete without a barbeque :), so we have a gas barbecue.

The garden is now an extra place where we relax, enjoy our breakfast in the weekends and also entertain guests. It has also been a place for me to just lie down and watch the sky or just unwind.

All our family and friends are impressed with our idea and they loved it. I have to thank AS for his creative thinking in using the synthetic grass. 🙂

Grilled chicken breasts with spicy salsa and spinach and avocado salad

Eating healthy can be boring sometimes so I constantly look for new recipes. I found this recipe on news.com.au site the other day . I tried it and it was a hit with my hubby and me. Please try it and see if you like it.

Ingredients

  • 4 skinless organic chicken breasts
  • 4 tablespoons fresh lime juice
  • 60ml olive oil
  • 1⁄2 teaspoon chili flakes
  • freshly ground black pepper
  • 2 tablespoons chopped coriander leaves

For the salsa

  • 1⁄2 red onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 large clove of garlic, crushed
  • 2 teaspoons deseeded and finely sliced jalapeňo pepper
  • 1⁄4 teaspoon ground cumin
  • 1⁄2 teaspoon sea salt
  • 200g baby spinach leaves
  • 1 ripe avocado, peeled and sliced
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice

Method

  • First make the salsa. In a bowl, mix together the onion, tomato, lime juice, garlic, jalapeno pepper, cumin and salt. Let it sit at room temperature for about 1 hour to allow the flavors to mingle.
  • In a shallow dish, mix together the lime juice, olive oil, chili flakes and pepper. Dip the chicken in the mixture until well coated. Marinate in the refrigerator for at least 1 hour.
  • Put the chicken on a baking tray and place under a preheated grill, 20cm from the heat. Grill for about 8 minutes on each side, or until a fork can be inserted in the chicken with ease and the juices run clear, not pink.
  • Divide the spinach leaves and avocado slices between 4 plates. Whisk together the olive oil and lemon juice, season with salt and pepper, and drizzle over the salad. Place the chicken on top, spoon over the salsa, garnish with chopped coriander and serve immediately.
  • Wash the spinach well. Drain and chop, then squeeze out the excess water. Add the spring onions, lemon juice, oil and pepper.
