Piro Jeera Aloo (Hot cumin potatoes)

Hello everyone! Today, I’m excited to share with you a super simple and delicious recipe using just potatoes and some spices. It’s perfect for those days when your pantry is running low. Let’s get started! 

Ingredients:

• Potatoes : 1/2 kg
• Turmeric powder : 1/2 teaspoon
• Chili powder : 1 teaspoon
• Cumin seeds : 1/2 teaspoon
• Chili flakes : 1 teaspoon
• Oil : 2 teaspoons
• Water : as required


First, we’ll start by boiling the potatoes. I like to use a pressure cooker for this, but you can use any method you prefer. Make sure the potatoes are not overcooked.

Once the potatoes are boiled, peel and cut them into bite-sized pieces. Now, let’s make a spice paste. In a bowl, add some turmeric powder and chili powder. Add a little water and mix well to form a paste. Set this aside.

Next, take a pan and heat some oil. When the oil is hot, add some cumin seeds and chili flakes. Wait until they turn brown.

Now, add the spice paste we made earlier and fry for a few minutes.

Add the boiled potatoes and mix everything well. Cover the pan and let it cook for a few minutes so all the spices blend perfectly.

And there you have it! Our delicious Piro Jeera Aloo is ready. Enjoy it with rice, Chiura (beaten rice), or roti.

Easy Garlic Prawn

You know sometime you wish that yummy and tasty food are easy to cook, this is definitely one of those recipe.

Ingredients

  • 1 tablespoon olive oil
  • 5 cloves garlic crushed
  • 1 tablespoon butter
  • 1 tablespoon salt
  • 500 gm cooked prawns peeled
  • Black pepper as required

Method
• Place oil and garlic in a bowl.


• Add prawns and stir to coat.
• Heat butter in non-stick frying pan.


• Add prawns and cook over high heat for about 4-5 minutes or until prawns are cooked. Add pepper before serving.

Toddler approved easy pasta

Ingredients

  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 red onion sliced
  • 200gm block cream cheese, cut into chunks and softened
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 eggs
  • 400 gm spaghetti
  • 50 gm Smoked salmon
  • 100gm shredded tasty cheese

Method

  • Cook spaghetti as normal and leave aside.

  • In a large saucepan, melt butter over medium heat. Add garlic and cook 1 minute.
  • Now add sliced onions and cook until it is brown.

  • Add cream cheese and reduce heat to low. Stir until cream cheese is about half melted.

  •   Add milk and continue to cook and stir until smooth.

  • Stir in the salt and pepper.
  • Add pasta and eggs and stir well.

  • Cook it for  few minutes until the eggs are cooked.
  • Remove from heat.
  • In a plate, put a serving of pasta, then put some shredded cheese and smoked salmon over it.

  • Chhori loves this pasta and the photos prove it.  🙂

Easy shortbread biscuits

I am always trying to find easy recipes so I can make it quickly and this is definitely one of them.

Ingredients

  • 150g plain flour
  • 100g butter
  • 50g icing sugar

Method

  • Preheat oven to 180 degrees.
  • Chop butter into small cubes.

  • Put flour, butter and icing sugar together into a bowl and mash them with your fingers until they mix.

  • Now kneed the mixture to form a firm dough.
  • Roll out the dough onto the bench and put some plastic wrap over it.

  • Use a rolling pin to make it flat around 1 cm high

  • Use a cookie cutter and cut them into your favourite shapes.

  • Line a tray with baking paper and grease it lightly.
  • Put the cut cookies onto the baking tray. Make sure you leave enough room (at least 1 cm) between the cookies as they will expand.

  • Bake for 15 to 20 minutes.
  • Do not let the cookies go brown

  • Take the cookies out of the oven and rest for 2 hours.
  • Serve the cookies with tea or coffee or place them in an air tight container for later.

Dhido

Dhido is a traditional and very popular food in Nepal. It is an everyday food for many people in rural Nepal. I have eaten dhido only once before and it was made out of maze flour. Today I am sharing the recipe of dhido, made of buckwheat flour and millet flour, which I learnt recently from my friend.

Generally dhido can contain any grain as long as it is ground into flour.

Ingredients

  • 1 liter water
  • 100 gm buckwheat flour
  • 150 gm Millet flour
  • 20ml ghee (optional)

Method

  • In a large pot, bring water to a boil.

  • Add 50 gm of millet flour to the water, while stirring continuously.

  • Now add the rest of millet flour and then the buckwheat flour stirring continuously. You need to keep stirring the mixture constantly for 7-10 minutes so the dhido is not lumpy. It is a good workout for the arms for sure.

  • It is cooked when color turns to dark brown.
  • Server with your favorite curry or dal with a dash of ghee.

Eating dhido

Dhindo is eaten by first making a small ball with the fingers, dipping it in the curry or dal and some ghee and then swallowing it. It is not chewed at all.
