Easy Garlic Prawn

You know sometime you wish that yummy and tasty food are easy to cook, this is definitely one of those recipe.

Ingredients

  • 1 tablespoon olive oil
  • 5 cloves garlic crushed
  • 1 tablespoon butter
  • 1 tablespoon salt
  • 500 gm cooked prawns peeled
  • Black pepper as required

Method
• Place oil and garlic in a bowl.


• Add prawns and stir to coat.
• Heat butter in non-stick frying pan.


• Add prawns and cook over high heat for about 4-5 minutes or until prawns are cooked. Add pepper before serving.

Scone recipe

A very easy scone recipe 🙂

Ingredient

  • 4 cups self-raising flour
  • 250 unsalted butter, cubed

  • 500 butter milk
  • Jam and whipped cream (homemade will be nice without sugar), to serve
  • Dates/raisin/cholate chips (optional)

Method

  • Preheat oven to 180°C.
  • Line flat baking tray with baking paper.
  • Sift self-raising flour into a large bowl.
  • Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.

  • Now add butter milk slowly with a flat-bladed knife until mixture forms a soft dough, adding more buttermilk if required.

  • If you want to add dates or raisin or chocolate chips, add now and mix with butter knife.

  • Turn the dough on a lightly floured surface.
  • Don’t knead dough or scones will be tough
  • Pat dough lightly into a 2cm thick round.

  • Using butter knife cut the small portion from the dough and lightly press together and place on baking tray.

  • Keep the scones close together so they will be soft.
  • Bake for 20 to 25 minutes or until golden and well risen.

  • Serve warm with jam and cream.

Easy Marinated chicken wings

Whenever we have people over, I love to use the oven for entrée so that it leaves my stove free for mains. So normally, I get spring rolls, spinach and cheese puffs and other oven baked treats for entrée. But one of my famous entrée is marinated chicken wing grilled in the oven.

Everyone who has tried it has loved and it is so easy to make.

Ingredients

  • 20 chicken wings
  • 2 tablespoons garlic ginger paste
  • 3 teaspoons turmeric powder
  • 3 teaspoons cumin powder
  • 3 teaspoons coriander powder
  • 3 teaspoons chilli powder (more if you want hot)
  • 2 tablespoons unflavoured Greek yogurt
  • Salt to taste

Method

  • Make a few small incisions in each chicken wing so the marinade can go inside the meat.
  • Mix all the marinade ingredients in a bowl with the chicken wings.

  • Leave the marinated chicken for at least 3-4 hours in the fridge. I normally leave it overnight so the meat is tender and marinade goes inside.
  • Preheat the oven at 220 C.

  • Place the chicken wings in a single layer in a wide, shallow tray.
  • Cook the wings for 15–20 minutes, turning often, until golden brown (or a little darker if you prefer) and the juices run clear when the chicken is pierced with a skewer/fork.
  • Serve hot.

Simple chicken couscous

These days I am after recipes that are easy, quick and healthy. This is one pot wonder.

Serves: Four

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 200g chicken breasts, diced
  • 1 inch fresh ginger, grated
  • 1-2 tablespoons harissa paste (use chilli paste if you don’t have harissa)
  • 2 teaspoon cumin powder
  • 10 dried apricots
  • 220g can chickpeas, rinsed and drained
  • 200 gm char grilled red capsicum sliced
  • 200g couscous
  • 200ml hot chicken stock
  • Salt to taste

Method

  • Heat the olive oil in a large frying pan and cook the onion for 1-2 mins until the onions turn golden.
  • Add grated ginger and fry for a few minutes.
  • Now add the chicken and fry for 5 mins until cooked through

  • Add cumin powder, salt and stir through the harissa to coat everything and cook for 1 min more.
  • Add in the apricots, red capsicum, chickpeas and couscous, then pour over the stock and stir once.

  • Cover with a lid and leave for about 5 mins until the couscous has soaked up all the stock and is soft.

  • Fluff up the couscous with a fork and serve with yogurt, if you like.

Kheer (Rice pudding)

Kheer (Rice Pudding) is one of the favourite dishes in Nepal and is an integral part of parties and ceremonies.  Kheer is regarded as a “pure” food in Nepal, as it is rice cooked in milk and so it is used in all pujas as well as weddings and other religious celebrations.

There are many ways to prepare Kheer and I am sharing a quick and easy recipe using sweetened condensed milk to get the desired thickness and sweetness for Kheer.  I made a big portion recently, which served 20+ people so please adjust the recipe according to your need.

Ingredients

  • 3 cups Arborio rice
  • 4 litres full fat milk
  • 2 tins (375 gm. each) sweetened condensed milk
  • 4 tablespoons Ghee (clarified butter)
  • 2 tablespoons chopped dry fruits
  • 2 tablespoons chopped Almonds
  • 10-15 cardamom pods sliced

 Steps

  • In a big container, pour all the milk and sweetened condensed milk and bring it to boil.

  • In the meantime mix rice with ghee using your hand (do not wash rice).

  • Pour rice into the hot boiling milk and stir it continually.
  • Cook the mixture for 15-20 minutes on low heat until rice gets cooked.

  • Kheer is ready when it becomes thick.
  • Turn off the heat and add chopped dried fruits, almonds and cardamom pods and mix well.

  • Kheer is now ready to be served hot Or cool it down and put in the fridge as it tastes amazing when cold too and makes a great dessert.
