Preserved lemon achar (kagati ko achar)

Ingredients

  • 1 kg small lemon
  • 350 gms salt
  • 150 gms red chili powder
  • 20 gms turmeric powder
  • 150ml of oil

Steps

  • Wash the lemons and use paper towel to pat dry.
  • Let it air dry for a few minutes after that to ensure there are no water particles.
  • In the meantime, wash a glass bottle/pickle jar and dry it well.
  • Cut each lemon into quarters.
  • In a large bowl, add lemon, salt, chilli and turmeric powder.

  • Mix well with hands to mix all the spices with the lemon to coat them with the spices.

  • Transfer prepared pickle into the glass bottle/ jar using a spoon.

  • Make sure you fill only ¾ of the jar. Close the lid tightly so no air can go inside. Use glad wrap on the lid if necessary to make it air tight.

  • Leave for a week under direct sunlight to dry the lemon.

  • Move the lemon around every day so the spice gets to all of the lemons and they all get the sun .
  • The lemon is ready to eat once the salt melts and coats the lemon wedges.
  • If you want to make the pickle last longer, add oil into the jar and keep in the sun for 2 more days.
  • Now the pickle will last for a few months.
  • Never use wet hands or spoon to handle pickle.

As the cold and flu season is here, it is a good idea to take preventive measures to make sure we don’t get sick. There are many home remedies that we could use to strengthen out immune system and today I am sharing the benefits of one of them: the lemon.

Lemon is easily available throughout the year, has strong antibacterial, antiviral, and immune-boosting powers and contains citric acid, calcium, magnesium, vitamin C, bioflavonoids, pectin, and limonene that promote immunity and fight infection.

Here are 10 benefits which have been attributed to lemons:

  1. Lemon gives immune system a boost with Vitamin C, an essential nutrient that protects the body against immune system deficiencies.
  2. Lemon is an excellent source of potassium, which is good for heart, brain and nerve function.
  3. Lemon juice not only encourages healthy digestion by loosening toxins in your digestive tract, it helps to relieve symptoms of indigestion such as heartburn, burping, and bloating maintaining the pH levels in the body.
  4. Having warm lemon juice early in the morning helps flush out toxins by enhancing enzyme function and stimulating your liver.
  5. Lemon juice helps replenish body salts especially after a strenuous workout session
  6. Lemon contains citric acid, which can be effective in treating acne. The vitamin C found in citrus fruits is vital for that healthy glowing skin while its alkaline nature kills some types of bacteria known to cause acne.
  7. Lemons contain pectin fiber, which assists in fighting hunger cravings.
  8. Warm lemon water is the most effective way to diminish viral infections and sore throats. If you have a sore throat, add the juice of 1 lemon and 1 teaspoon (5ml) of sea salt to 1 cup lukewarm water and gargle three times a day to diminish the burning sensation.

Happy Weekend

I am loving the weather in Sydney for the last few days, it’s been over 25oC and just amazing to be out and about.

On Friday after work, I was Skyping with my parents when AS returned home from work. I was on Skype for another 30 minutes before I finished talking with my parents. As soon as I was done, I wanted to go to the kitchen to make tea for us but as I was about to do so, I saw AS coming with a tray with tea and cakes. When he put the tray down, I was even happier to see a red rose on the tray. It was a nice surprise and I was touched. As I always believe little things definitely helps a lot and it definitely helped to lift my mood, and that is how I started the beautiful weekend.

On Saturday, I wanted to go for my morning run but as I was coughing the whole night I decided against it and instead watched Downtown Abbey until AS woke up. When he did, he asked me to rest and cooked me a nice warm breakfast in bed. He is really looking after me so well that I feel so spoiled. We stayed home most of the day enjoying each other’s company, talking and planning our life.

Later in the afternoon after lunch, he ran me a bubble bath so I could relax. Since my sickness, I am feeling tired and my body feels weak so it was a good way to unwind and relaxed my body and my mind too. We went for a walk in the evening just to enjoy the fresh air.

On Sunday, we woke up early and went to IKEA for breakfast and quick shopping before coming home to change and attend our friend’s birthday party. She served us an amazing hotpot for lunch and it was a perfect weather to enjoy the food and company.

They also had lemon and orange in their garden so I picked some for the first time in my life. It was so much fun.
