Chicken, cheese and spinach melt

I think a while ago, I have told you that I am a big fan of gozleme (a savoury traditional Turkish pastry dish, made of hand-rolled dough that is lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked over a griddle). First I was thinking, I should make my own dough like them and but by the time I left work, I was tired and not ready to make it from scratch so I bought Lebanese bread instead.

I am glad it turned out to be nice and both of us enjoyed our dinner.

Servings: 2

   Ingredients

  • 2 Lebanese bread (tortilla is another option)
  • 50g baby spinach
  • 100 g chicken mince
  • 100g tasty cheese shredded
  • 1 onion, finely chopped
  • Salt according to taste
  • Chilli flake according to taste
  • Lemon wedges, to serve

Method

  • Heat oil in a frying pan over medium heat. Add onion and fry it until it is cooked. Add chicken mince, salt and cook, stirring, for 8-10 minutes or until browned.

  • Preheat sandwich press and line with alumni foil. (You can use a pan if you don’t have a sandwich press)

  • Place 1 bread in the press. Spread chicken mixture over bread. Then add cheese, chilli flakes and spinach on the top.

  • Fold the bread and cook until golden. Stand for 1 to 2 minutes.

  • Cut into quarters.

  • Serve hot with lemon wedges.

Easy Chicken Spaghetti Bolognese

Servings: 4

Ingredients

  • 2 tablespoon olive oil
  • 1 onion, finely sliced
  • 1 red capsicum diced
  • 100g mushroom, finely sliced
  • 500g chicken mince
  • 2 garlic cloves, crushed
  • 350g tomato purée or tomato pasta sauce
  • Salt to taste
  • Chilli flakes to taste
  • 500g dried spaghetti

Method

  • Cook pasta in a large pan of boiling water according to packet directions.

  • Heat oil in a frying pan over medium heat. Add onion, capsicum, mushroom, garlic, salt, chilli flakes and fry, stirring often, for 8 minutes or until vegetables are tender. Add chicken mince and cook, stirring, for 8-10 minutes or until browned.

Chicken spaghetti Bolognese (2)

  • Add tomato purée (pasta sauce) and stir until combined well and mixture comes to a boil. Reduce heat and simmer for 15 minutes.

  • Add cooked pasta in the sauce and mix well.

  • The pasta is ready to be served.

Prabal Gurung’s Spring/Summer 2015

My favourite designer, Prabal Gurung just showcased his latest collection. His latest collection is inspired by native Nepal and is playful with texture and silhouette, offering his signature feminine styles mixed with an unexpected dose of androgynous charm.

In his SS15, the designer wanted to continue what he began last season. ″I wanted to continue the journey,″ he said. ″This time it′s more a visual diary of her trek up the mountains.″ We′re back in the Himalayas, only now it′s spring. Instead of deep reds, he used a palette of sunset pastels.

According to Vouge, Prabal Gurung went for a more undressed approach with sassy slashes, slits and keyhole flashes of flesh. Sporty in silhouette with racer-back vest styles and little flirty skirts, his midnight tones and dusky grey-purple palette kept it regal and evening worthy – iridescence incarnating short shifts and T-shirt numbers – while zingy knits continued along this peek-a-boo vein, veering off around the body. And this was very much the theme and silhouette of the collection, drawing on frills and spills of hemlines as it went, the shorter dresses towards the end of which were the prettiest and most covetable.

The collection got lots of positive reviews from fashion editors and fashionistas.

I am in love with  the awesome prints of Himalayas and clouds. Of course, I loved it all but here are my favourites.

Apart from the clothes, I am lusting on those amazing killer heels.

Sleeping in

I know sleeping-in during the weekends might be something you all must look forward to but it is something I wish I could do for a long time. I wake up between 6:00 am and 6:30 am during weekdays and my body is like an alarm clock and wakes up before 7am even in the weekend no matter what time I go to bed. I try my best to stay in bed after I wake up but it just doesn’t work for me no matter what I do. This is the reason I try to go to bed on time even on weekends.

I know going to bed and getting up at the same time each day will help to keep us feeling good and performing well. However, sometimes I wish I could sleep in too, just for the novelty of it. Most of the mornings, AS will be sleeping when I wake up on Saturdays and Sundays morning and I get jealous of him.

I try not to disturb him so I will either go for a run or try to do something else until he wakes up. I have to admit I do wake him up if he doesn’t wake up by 8 am sometimes. It might sound cruel of me but there are times I am so bored that I need company.

Last weekend we had to go to a birthday on Saturday. I always like to go to parties where I dress up in traditional sari. Even though we didn’t go out during the day, it took me a while to be ready. You know, it’s a woman thing, hair, makeup, sari and accessories can take heaps of time.

Anyway, we had a good time at the party and were home back a bit late, not too late though. We went to bed straight away when we came home as I was really tired.

The next morning, I woke up. When I turned around, AS was awake (that was a bit of a surprise for a weekend) so I asked him what the time was. He answered 10am and I couldn’t believe my ears.

I think I haven’t slept in till 10am since forever even when I went to bed at 3am so I was really happy that I finally did. I felt good and fresh. I wished I could do that more often (fingers crossed).

But sleeping in on weekends doesn’t seem like a great idea this morning when I couldn’t wake up like normal today. Both of us were running around like headless chicken getting ready this morning. Feeling a bit tired and not fresh at all today 😦 .
