Pan fried Chicken Gizzard

As I have mentioned in my previous post, in Nepal, a goat’s brain (gidi), feet (khutta), head (tauko), stomach (bhundi), tongue (jibro), liver (kalejo), kidney, lungs (phokso), fried intestines (aandra), fried solidified blood (rakati) are considered delicacies and are in very high demand during Dashain and other festivals. We also eat certain parts of chicken apart from the usual.

I know some of you might feel squeamish even thinking about eating offal but believe me if you love your meat, you will love these dishes. Another thing is that eating offal uses the parts of the animal that might otherwise be wasted. As it takes 10 kilos of cereal to produce one kilo of meat we should not waste any part of the carcass. Unless you deliberately avoid meat, eating offal should be regarded as “green”.

Today I am sharing the recipe to cook chicken gizzard. A gizzard is an organ found in the digestive tract of a chicken. Similar to a stomach, the gizzard is used to grind up the foods the bird eats. Eating gizzards provide a healthy dose of certain vitamins and minerals.

Chicken Gizzard is a very popular appetizer and tastes really good.

Ingredients

  • 500 gm Chicken Gizzard, cleaned
  • 1 teaspoon Ginger/Garlic Paste
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 3 teaspoon Vegetable Oil
  • Salt to taste

Method

  • Clean the chicken gizzards and boil them for 5 minutes until they are tender.

  • Drain them and let it cool for a few minutes.

  • Cut them into bite size pieces

  • In a big bowl, add ginger garlic paste, cumin powder, coriander powder, turmeric powder, chilli powder and salt with chicken gizzard and mix them well.

  • Heat oil in a pan and add the gizzard and fry for around 8-10 minutes.

Chicken Gizzard (6)

  • Keep stirring occasionally until they are brown on all side.
  • Serve hot as an appetizer.

BioAge Report

The gym I was going to offered a free BioAge test for the team who won one of their challenges and lucky for me I was in that team. Before that I was not aware of BioAge.

A BioAge assessment gives you an extensive health assessment that will allow you to compare your chronological age with your measured biological age, as well as advice on how to reduce your biological age and improve your longevity.

For my BioAge test, I had to fill a form which had questions regarding my health and my diet. Then they measured my weight, height, BMI and after that they got me to do a few physical tests like plank, steps, crunches and some more exercises.

It took around 40 minutes for the entire test to finish and I got the result the next day.

The result stays that my biological age is a lot younger than my chronological age, 8.5 years to be precise.

I am very happy with the result actually because I have doubts about my fitness at times and with this test I know I am in a good place. I could still build some more strength and could improve it further. One thing I noticed was that not smoking and not drinking alcohol helps to positively increase the gap between the chronological age and the biological age.

Being a good mum

I think being a mum is a really hard job as you are constantly judged. Not by your little ones as you are their world (at least when they are small) but everyone around us. Every time you have a conversation with someone, they will subtly imply that either they are doing a better job than you or that you am doing something wrong.

There are many instances like that but here are some recent examples.

  • As I mentioned previously, I normally make Chhori’s jaulo in advance. I make a batch for 3-4 days so I don’t have to cook every day. A mums have a shocked look on their face saying how baby can eat old food. They also mention that, they never even give their kids foods that were cooked in the morning for dinner. So fresh meal is prepared every meal. First of all, good job for doing that but please don’t judge me. I want to spend more time with my daughter when I come home from work every time than spend too long in the kitchen preparing food in advance helps me achieve my goal. It is good that you can manage everything so well but not everyone is the same so let it go.
  • I told someone that Chhori is sleeping in our room in a cot and end up on our bed as well. I was told we should make sure she sleeps in a separate room form around 3 months if not from birth. I guess being from Nepal, I felt it normal to have baby in our bedroom. We have made a room for her but I am not ready for her to sleep on her own yet. According to them, making them sleep on the same room as parents, we are not giving them room to be independent.
  • I am still breastfeeding (Chhori is 13 months now) as I still have plenty of supply and am thinking to continue it until she is around 18 months. People are shocked that I haven’t stopped already and that I am still thinking to go for so long. These days recommended timeframe here is at least 1 year and longer if you can so I was thinking I was following the guidelines but some mums think I am doing it all wrong.
  • I wrote a post recently about Waiting for baby to wake up when she sleeps in a car. Many mums think I am going overboard and someone even mentioned that I should get “Mother of the year” award. But for us, it is necessary as Chhori mostly has short naps like 30-45 minutes and if we wake her up, she won’t even sleep that long.
  • I love dressing Chhori up and to my surprise, some people have a problem with that too.
  • If you are on my Facebook, you will see lots of photos and videos of Chhori. I frequently update it and it is mainly for our family overseas. AS’s parents haven’t met seen Chhori yet so it is important for them to see all these photos and videos but some people think I am sharing too much.
  • When I started going to the gym, initially my mum was here so I used to leave Chhori with her but later I put her in childcare. A few people told me that she is too young to be left with strangers even for 2 hours. It was selfish of me to leave a baby just to exercise.
  • I used to take packaged food (purees) for Chhori when we are out and about when she was small. I was judged for buying her food instead of bringing home cooked meal. Now she can eat our food so I try to give whatever she can eat. So now I am judged for giving her adult food and not bringing baby food from home.

These are only a few examples. As you can see, there are so many times that people make me doubt about me being a good mum. I am trying my best and I love Chhori so much that I want the best for her.

Proud parents

I know Chhori is just 1 year old but she has already given us many moments that make us proud.

A few of the times I felt so proud are

  • I taught her how to do “Namaste” form when she was around 6 months.

  • And she was a very quick learner and she does Namaste to everyone when we ask her to. It is one of the cutest moments.

  • We taught her how to get off from the bed and sofa. When she stared to be mobile, we thought it is safest if we teach her how to get off the sofa or bed safely. You know, the leg first from the back until you touch the ground. She is really careful and she doesn’t let go until her feet touch the floor. Amazingly she learnt it so quickly that she practices it every day. Most of the time, it works but sometimes it doesn’t and she falls down as she is a bit over confident I think 🙂 and other times if it’s a high bed, like a friend of mine has, she is left dangling as her feet don’t touch the ground and she won’t let go. But she cries out so I can rescue her.
  • But the proudest moment must be when we went for her 1 year immunisation, The doctor gave her one shot in each arm, so two needles. I was worried a bit as I didn’t want her to cry too much. I and AS were making plans on how to keep her distracted so she wouldn’t cry. So when the doctor started to give her the needle, as the first needle went in her left arm, she just looked at it and did not even make a sound.

  •  I was singing some rhyme to distract her but she did not care. Then the other needle went in the other arm and she just whimpered for a second but not a tear was shed. I was surprised at how well she handled the needles.

  • We are definitely very proud parents of a brave girl. 🙂

I am sure there will be more moments in the future too and  she is making us so happy.

Sticking to healthy eating

I just realised that it is harder to stick to a diet once I started working than when I was staying home. When I was working out, I started to eat healthy which meant we didn’t buy any junk food at all. Because sometimes it is so hard to control the cravings so it was best to make no junk food available at home.

On top of that we introduced healthier food into our diet. So along with exercise, it was easier for me to stay in shape.

It has been a month now that I am back at work and it seems like I am eating unhealthy food (cake, chocolates, and chips) more frequently. We have someone’s birth every now and then so the cake is always around. Also with the cake there will be chips and dips and sausage rolls which are hard to resist. I know I need to be in control more but it is so easy to let go when you see everyone else eating.

It seems rude not to go to morning teas you are invited to as it is a good way to socialise but sometime saying no to cakes makes me stand out from the norm. Last week I went to one morning tea and didn’t eat anything as there was nothing healthy, no fruits at all but I was so happy when I went to one today and saw this healthy platter.

It had celery, carrot and capsicum with some cheese and biscuits. Perfect for someone who is trying to watch what they eat. I am definitely going to make sure we have this platter along with fruit platters on every morning tea we organise so I can eat without feeling guilty.

How are you eating healthy when there is so much unhealthy food around? So much temptation everywhere you go.
